I just love carrot cake y’all. It’s one of our house specialties. I had some extra today and decided why not throw it into a cookie!

We start with a buttery cinnamon cookie and add in tons of caramel, white chocolate, and cream cheese chips. Stuff it with dulce de leche, then dip it in chocolate and finish with some salted caramel drizzle.
