Y’all just don’t know how summer hits when you live in a part of the country that you don’t see warmth and sun very much, BUT ITS HERE!

When I think of summer I always think of lemon and some sort of fruit, typically raspberry or blueberry. We went with a blueberry flavor last month so raspberry it is!

Start with a rich lemon cookie base and add in white chocolate, cream cheese chips, lemon cake, and raspberry poptarts. We stuff it with a raspberry puree, then we dip the cookie in white chocolate, and nestle a chocolate dipped raspberry poptart on top.
